the best summer smoothie


I adapted this smoothie from this months edition of Cosmopolitan. It is so summery and fresh tasting. I’ve made the smoothie twice in the last 24 hours and love that I have a new smoothie to add to my repertoire. This smoothie doesn’t have protein powder in it, it’s more of a summer snack or treat than a meal replacement or workout recovery however I did replace regular yogurt with greek yogurt which adds protein. 

Summer in a Smoothie 


  • 6-8 ice cubes 
  • 1/2-1 C. coconut milk 
  • 1/2 C. fresh pineapple chunks 
  • 1/2 C. low fat or 0% fat plain greek yogurt 
  • 10 fresh mint leaves
  • 1 TB. honey
  • 1/2 tsp. vanilla 
  • pinch of salt 

Blend it all up and enjoy!
